Pacamara Collaborative

The Pacamara Collaborative is a signature lot produced by a coalition of farmers in the Gold Mountain Coffee Growers network, situated in Nicaragua’s Jinotega region. Pacamara is a varietal developed from crossing Pacas and Maragogipe: it yields very large, distinctive beans and tends to have lower yields compared to more common coffee varietals. Despite the lower yield, this group of farmers comes together to combine their Pacamara harvest, enabling the production of a microlot with traceable origin and consistently high cup quality.

In terms of flavor, The Pacamara Collaborative is striking for its apple-centric fruit profile: Fuji apple, white peach, honey sweetness, and other bright fruit notes dominate, often with delicate floral or nutty undertones (marzipan, pear, sometimes lilac or white grape) depending on roasting and brew style. The body is generally smooth, with a refined acidity that balances the sweetness and fruit character. The roast tends toward the lighter side, to preserve the nuanced fruitiness and engage the complex aromatics inherent in Pacamara beans.
